APPEARANCE; In his default form Guilmon takes on the appearance of a roughly human-sized dinosaur. About the size of an older child/young teenager. His body is lined with black stripes and various other markings on his forehead and belly. Guilmon's tail is large, fairly flexible, and he has three very huge claws on each of his hands that can bend like fingers in order to pick things up. As he reaches his higher evolutionary levels, his appearance changes. As Growlmon, he looks like a larger version of himself with two blades on his arms and messy silver hair. As WarGrowlmon he gains a cyborg appearance with jets on his back, jagged metal jaws, a metal torso with blasters on his chest, and fully robotic arms.
Finally, as Gallantmon, he gains the appearance of a knight with white armor, a flowing cape, and a helmet that bears a resemblance to his Guilmon face. Of course, he won't be able to reach these forms without Takato, but it's worth mentioning.
PERSONALITY; Despite resembling a small dinosaur, Guilmon is usually by no means a vicious killing machine. For the most part he is very cheerful, playful, and childish. I think it's especially important to emphasize the child aspect of his personality, as I play him from the Japanese version. As a result, Guilmon's world view and mannerisms resemble a very young kid who still has a lot to learn about the world where the English version represents him more as a goofball after the early episodes pass by.
Don't get me wrong. In the Japanese version, Guilmon is still very goofy, but his goofiness stems from his simple mindset, energetic personality, and desire to play. He struggles to pronounce "momantai" initially, goes on and on about Guilmon bread, and mimics the Gekomon's speech quirks because it's fun, just to name a few examples. In addition to this silliness, Guilmon often comes across as a bit naive. At the beginning of the series, Takato had to show him how to eat, and he didn't fully understand why he had to hide. Even as the series went on, he had moments of cluelessness, such as when he asked a blushing Takato why he was "red like Guilmon".
He's come a long way since his humble beginnings, where he was easily goaded into Impmon's mischief and shenanigans with Culumon. He's become a brave Digimon who's willing to stand and fight with and for his friends and forgive even if the person (or Digimon) in question performed unspeakable acts, like killing Leomon. When he had to leave Takato behind, he did so with a smile, assuring his partner that they'd play again. This is quite the change from the start of the series, where he could barely stand to be without Takato when he left for school.
And this also highlights an aspect of Guilmon that's easily overlooked-- his strange, carefree wisdom. Guilmon has shown surprising insight for someone as childish as he is. When Takato worried over his changes through evolution, Guilmon assured him that he would always be Guilmon. When Takato questioned how he could fight with Guilmon, he told his Tamer that if they wish hard enough, they could make it work. And when the Ark nearly left Takato and Culumon behind, Guilmon called out to it despite the fact that it was seemingly an nonliving ship.
And it worked.
Going hand in hand with his positive outlook, Guilmon is generally a very trusting, friendly, and loyal creature. He greets strangers with smiles and enthusiasm, as long as they aren't obviously untrustworthy. Treat him and his friends with kindness and he'll welcome new friends with open arms. Just don't be surprised if he tries to play; it's one of Guilmon's favorite pastimes, and his image song emphasizes how he'd love to play all day.
So far, I've focused a lot on Guilmon's positive traits, but that doesn't mean he's perfect. Despite his generally friendly personality and perceptive moments, he is still quite young by Digimon standards and has a lot to learn about the world. He also has moments of recklessness, such as trying to evolve on a subway train despite Takato's protests, just so he could show that he was one of the Digimon that protected the city. This reckless side becomes more apparent when he slips into the feral mindset that arises when angered or in the heat of battle. At these times, Guilmon's less likely to think rationally and becomes a battle ready behemoth willing to rip, bite, and char his opponents. And because he looks at the world in such a simplistic fashion, complex moral dilemmas and situations requiring deep thinking may be lost to him.
Though there is a weird aspect of Guilmon in the Japanese version, in that his maturity level seems to fluctuate depending on his form. As Guilmon and (for the most part) Growlmon, he retains his youthful attitude, third person speech, and high pitched voice. Granted, he has moments as Growlmon where he does show a bit more maturity in his speech patterns, such as when he begs for Takato's help in episode 14 so that he may find the strength to defeat Mihiramon. When he becomes WarGrowlmon, he drops the third person speech entirely and speaks with a deeper voice. When he becomes Gallantmon... well, he's essentially a completely different Digimon.
In the Japanese version, Gallantmon behaves like a sophisticated, noble warrior. He speaks in a refined, albeit cocky manner, telling Beelzebumon that he's a demon who sold his soul to the devil to become one himself. He refers to himself as "I, Dukemon" and berates the D-Reaper for its twisted view of the world. He's also shown to be quite hotblooded, charging fearlessly into battle against even the most devastating foes. Sometimes the other Matrix Evolved Digimon had to calm him in these circumstances, though he had a few moments where he told Takato to take caution. This proves that Gallantmon can think rationally in a fight, since he knew that entering the D-Reaper's bubble would drain him of his power. His recklessness is more likely to arise when truly angered, much like any of Guilmon's other forms.
That last bit is particularly of note, since Japanese!Gallantmon speaks independently of Takato, and Takato refers to him as Dukemon in those situations despite them sharing the same shell. Though I doubt Guilmon will Matrix Evolve/Biomerge in Terminal any time soon, I thought to share it on the off chance that it ever does occur.
To wrap this all up, I'll briefly touch upon one of the most important aspects of Guilmon as a character-- his bond with Takato. Takato really is everything to Guilmon. His creator, his best friend, his partner, and the one who taught him the most about the world. Naturally, Guilmon holds him in extremely high regard and often looked to him for guidance whenever he got confused or uncertain. While he didn't always follow Takato's instructions, he often would talk about how Takato told him to, say, guard Culumon or stay in his house/avoid Impmon. He also got very, very upset whenever Takato got angry with him.
Even without Takato present, Guilmon will undoubtedly retain his loyalty and will probably talk quite a bit about his partner. In Guilmon's mind, Takato is the best Tamer a 'mon could ask for, and it will take time for him to adjust to fighting without him until/if he arrives.

He promised we'd see each other again, so I think we will. Until then, Guilmon will do his best to help on his own. It'll be hard, but I think I'm pretty strong, and there's lots of other Digimon already helping. It's like a great big team!

I don't know... Maybe the ability to make bread out of thin air. Or fly all the time, like the White Wings card! Guilmon can fly as WarGrowlmon, but I'm super big in that form. It's hard to play when everybody else is so small!

THIRD PERSON; It was kind of overwhelming, to say the least. So much had happened in such a short amount of time that it swept Guilmon up in a whirlwind and left his head spinning like crazy. Right as he and Takato along with all their other friends took out the D-Reaper, he and the other Digimon all got yanked back into the Digital World with only a few short goodbyes. And while Guilmon believed firmly in Takato's promise and longed for the chance to play and eat bread and laugh with him again, he hardly expected to get dragged from one Digital World to the next.
As he wandered the bustling city streets, Guilmon sniffed the air. So many new scents. So many new Digimon! In a way, it was kind of exciting, and he greeted the residents with a huge grin. None of the places he'd seen in the Digital World were quite this lively, and there was so much space to explore. Where would he even start? And would any of the local Digimon want to play with him?
Before he could think any further, his stomach let out a low growl, and Guilmon came to a stop. Ears drooping, he placed a hand over his chest and moaned.
"...Maybe Guilmon should find some bread first."
In a city this big, there had to be at least one bakery. Maybe even more! If he could just pick up the scent, he'd surely find something tasty to snack on. Maybe a whole lot of something! Left with an empty stomach and very few options, Guilmon whiffed the air, looked left and right, and barreled down the street. He didn't know which way to go, but if he kept on going, he'd probably bump into a bakery somewhere.
After all, what kind of Digimon didn't like bread? That'd just be silly!
